Banana Cake


- 90g oil
- 90g castor sugar
- 1 large egg, lightly beaten
- 125g cake flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 3 bananas, mashed with a fork
- 25g milk
- 1/4 tsp vanilla extract

1. Beat egg and sugar till light and creamy.
2. Combines milk, mashed bananas, oil and vanilla essence.
3. In a separate bowl, sift together cake flour, baking powder and baking soda, mix it.
4. Fold in flours into the wet ingredients until no traces of flour remain.
5. Pour into a lined 6-inch round tray.
6. Bake at 175 degree celsius for about 55mins, or until cooked. (Can tend the cake with aluminium foil to prevent the top from burning)
