Scrambled Eggs (with Capsicum)

1) Take two eggs per person and break them into a bowl.
2) Heat a medium sized non-stick frying pan or saucepan over a moderate heat to warm it up.
3) Meanwhile add salt and pepper to the eggs in the bowl and 1 tablespoon of milk per egg and beat the mixture vigorously for around 2 minutes until the eggs have completely blended together. The more the mixture is whisked, the more air enters, which should result in light fluffy eggs once they are cooked.
4) Once the pan is warm, add 1 teaspoon of butter per egg and melt the butter tilting the pan, so that it melts evenly.
5) As soon as the butter turns to liquid add the beaten eggs and allow the eggs to set slightly. Do not stir the eggs at this point.
6) As soon as the eggs begin to solidify, take a wooden spoon or spatula and begin to scrape the eggs from the sides of the pan and fold them over into the middle.
7) Remove the pan from the heat. The eggs will continue to cook even though they have been taken away from the heat, due to the heat from the pan. For this reason, you may remove the pan from the heat when the eggs are still fairly moist, as long as they are firm.
8) Serve the scrambled eggs with toast or as you prefer.

排骨王

排骨 6块
生菜 4片
洋葱 1粒 (去衣切片)

腌料:
蛋 一个
耗油 2 tbsp
盐 1 tsp
蜀粉 2 tbsp
油 1 tbsp
麻油1 tsp
面粉 2 tbsp
蛋黄粉 1tbsp
糖 1tsp

调味料:
番茄酱 2 tbsp

辣椒酱 1tsp
Curry 粉 1 tsp
糖 1/2 tbsp
盐 1tsp
生抽 1 tsp
水 3 tbsp

制作酱汁:
熱鍋加入1茶匙食用油,爆香洋蔥炒至半透明。     倒入醬料並煮至即將沸騰。
1)将油倒入油锅中烧热。
2)倒入洋葱,用中火略炒(爆香洋蔥炒至半透明)。
3) 倒入调味料 ,盖上锅盖,用小火煮5分钟,至材料浓稠即可。

制作排骨王:
1) 将排骨和所有的腌料一起倒入碗中搅拌均匀。
2) 用保鲜膜将碗包起,搁在一旁腌制半小时。
3) 放一大碗油进油锅,烧到中热。
4) 将排骨放入油锅里炸至金黄色后取出。
5) 再烧热油锅,倒入适量的油。
6) 排骨加入少许粟粉捞均匀后和酱汁拌均匀 (放入锅里),並迅速翻炒,最后加入生菜,略炒, 即可取出配飯享用。

New York Cheesecake

老婆仔的生日将要到来,决定尝试做 New York Cheesecake 当作她的生日蛋糕。参考了网上 recipe,便到 Cold Storage (如果不是因为有 Voucher, 才不会去 Cold Storage 买材料,一个字 “贵”)购买材料 (p/s: 重口味的 Cheesecake, 材料是超贵的哦)。花费了超过 SGD30 买材料 @_@. 真的很怕失败,因为材料贵哦。






Ingredients (serves 10)
1 x 250g Digestive Biscuit
125g unsalted butter, melted
750g cream cheese, at room temperature
215g (1 cup) caster sugar
1/2 tsp vanilla extract
2 tsp finely grated lemon rind
2 tbs plain flour
4 eggs
1 x 300ml ctn sour cream

Method

1) Place the biscuits in the bowl of a food processor and process until finely crushed. Add the butter and process until well combined. Transfer to the lined pan. Use a straight-sided glass to spread and press the biscuit mixture firmly over the base and side of pan, leaving 1cm at the top of the pan. Cover with plastic wrap and place in the fridge for 30 minutes to chill.
2) Preheat oven to 160°C.
3) Meanwhile, use an electric beater to beat the cream cheese, sugar, vanilla and lemon rind in a large bowl until just combined. Beat in the flour. Add the eggs, 1 at a time, beating well after each addition until combined. Stir in the sour cream until just combined.
Pour the cream cheese mixture into the base.
4) Place the pan on a baking tray and bake for 1 1/4-1 1/2 hours or until just set in the centre. Turn oven off. Leave the cheesecake in oven, with the door ajar, for 2 hours or until cooled completely (this will prevent cheesecake from cracking). Place in the fridge for 4 hours to chill.

每个星期都期待星期三的到来,3pm - 4pm 由 1003 fm 播放的节目 (以量,把爱带回家).今天,以量与听众分享了一位9岁小孩的个案。这一位九岁的小孩因为患癌而离开他的朋友,父母。

通过这个个案,以量告诉大家,死亡并不只是老人家的权利。很多人往往因为很小的挫折,小烦恼便钻牛角尖,怨天尤人。我们必须时刻反思,珍惜现在所拥有的。把爱带回家。
