Chocolate Raisin Muffins

Chocolate Raisin Muffins
Ingredients:
113g butter
2 large eggs
240ml buttermilk/milk
2 tbsp vanilla extract

230g all purpose flour
60g cocoa powder
200g brown sugar
1tbsp baking powder
1tbsp baking soda
1/2 tbsp salt

100g semisweet chocolate chip
100g raisins


1) Preheat oven to 375 degrees F (190 degrees C).
2) In a large bowl whisk together the melted butter, eggs, buttermilk, and vanilla extract.
3) In another large bowl whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt. Stir in the chocolate chips & raisins.
4) With a rubber spatula fold the wet ingredients into the dry ingredients and stir only until the ingredients are combined.
5) Evenly fill the muffin cups with the batter (using two spoons or an ice cream scoop).
6) Place in the oven and bake until a toothpick inserted in the center of a muffin comes out clean, about 20 minutes.
7) Transfer to a wire rack and let cool for about 5 minutes before removing from pan.

Makes 18 regular sized muffins.
